Vegan Blueberry Muffins

Vegan Protein Blueberry Muffins. Healthy, protein vegan muffins under 90kcal per muffin. Perfect for breakfast on the go!

1/4 cup Coconut Flour
1/4 cup Spelt Flour
1/2 cup stevia or sweetener of your choice.
1 cup fresh or frozen blueberries
4 Scoops Vitally Vegan Blueberry Protein Powder or your favourite flavour
2 tsp Baking Powder
2 tsp Vanilla Extract
4 Flax Egg or Egg Replacer

To make
Step 1 - Add all the dry ingredients into a bowl or food mixer.
Step 2 - Then make your flax egg, with ground flax seeds and water 1 tbs of flax to 3 tbs water.
Step 3 - Add your wet ingredients to the dry and mix.
Step 4 - Stir in your blueberries.
Step 5 - Pre-heat over to 180c and line a baking tray with cases.
Step 6 - Spoon out evenly between 10 cases.
Step 7 - Cook for 18-20 minutes.
Best enjoyed warm with a cup of tea or coffee :)
