A classic Thai Green Curry made Vegan, its healthy has a good balance of protein, fats and carbs and is also quick and easy to make.

280g Extra firm tofu
120g White rice
1 Tin of coconut milk
1 A sachet of Thai green paste
4 tbsp of plain flour
3 Spring onions
1/2 Red chilli

Step 1 - Add the rice and 240ml of water to a pan and bring to the boil with the lid on, once the water starts to boil, reduce the heat to very low and leave to simmer stirring occasionally.
Step 2 - Drain the tofu and slice into 8 pieces.
Step 3 - In a bowl, sprinkle the flour and cover each piece of tofu.
Step 4 - Heat the coconut oil in a frying pan and fry of the tofu 3/4 mins each side.
Step 5 - Then in the same pan add the chopped spring onions and diced chill and fry for 1/2 mins.
Step 6 - Pour in the curry paste and coconut milk to the frying pan.
Step 7 - Leave the sauce and tofu to simmer for 10 minutes, while the rice is still cooking.
Serve the rice, and tofu then sprinkle the coriander, extra spring onions and chilli on top. Add salt and pepper for additional seasoning.
