Vegan Sticky Orange Tofu, served with Veggie Rice!

Makes - 2 Servings
Level - Moderate
1 Pack of Tofu ( I use Tofoo Co)
120g White Rice
2-3 tbsp cornflour
2 Spring onions
2 garlic cloves
1 cup peas
1 cup sweetcorn
1 tbsp tamari
4-6 tbsp olive oil
Ingredients for the sauce
1 tbsp grated fresh ginger
1/2 fresh chilli
2 tbsp orange zest
1/2 an orange of freshly squeezed juice
4 tbsp tamari
4 tbsp rice vinegar
1 spring onions
1 garlic clove
Step 1 - Add your rice and water to a pan and bring to the boil with the lid on, as soon as it starts to boil turn the heat down to very low ie a third of the heat and leave the lid on to cook for 15 minutes.
Step 2 - In a bowl add your corn starch, then chop your tofu into small chunks and then add these to the bowl, ensuring the tofu is covered completely with the cornflour.
Step 3 - Ina frying pan, heat the olive oil on high heat.
Step 4 - Add your tofu bites to the frying pan and cook until brown 3/4 mins each side. Once cooked remove from the pan and leave to one side.
Step 5 - In the same frying pan, on a lower heat fry off your spring onions, chopped carrot, garlic, peas and sweetcorn.
Step 6 - Then add your rice to the frying pan, along with S&P and tamari, cook for 3/4 minutes on low heat, mixing everything together.
Step 7 - In a separate frying pan, add some oil and heat up. Add you sauce ingredients and heat until it starts to bubble, then add your tofu back into the sauce mix, ensuring the tofu is covered in the sauce, for 2/3 minutes.
Step 8 - Serve your rice with your sticky orange tofu on the side and garnish with fresh spring onion and S&P.
