This is a great go-to vegan snack for lunch, that's under 500 kcal!

1 Pack of southern fried tofu
2 tbsp Vegan mayonnaise
2 Wholemeal wraps
Salt & Pepper

Step 1 - Cook the tofu in the oven for 18/20 mins.
Step 2 - While the tofu is cooking prepare the wraps.
Step 3 - Add a tbsp of vegan mayonnaise to the centre of each wrap.
Step 4 - With a vegetable peeler grate the cucumber to make ribbons.
Step 5 - Once the tofu is cooked, remove from the oven and place in the centre of each wrap.
Step 6 - Then add your cucumber ribbons, rocket and sprinkle with S&P.
Step 7 - Fold the sides in on each wrap and then roll it over.
Step 8 - Slice each wrap in half and serve.
