Pumpkin & Cinnamon Cookies

Left over pumpkin? Convert it to pumpkin puree and make these delicious cookies below, crunchy on the outside and chewy in the middle.
Preparation Time -  6 minutes
Cooking Time - 14 minutes
Makes - 12 cookies
Level - Easy


1 1/2 Cup's Oat Flour
2 tsp's Baking Powder
1/2 tsp Bicarbonate soda
1 tsp cinnamon
1/2 Cup Coconut Sugar
1/2 Cup Stevia or other sweetener
2 tsp Vanilla Essence
1/2 Cup coconut Oil
1/2 Cup Pumkin Puree

To make
Step 1 - Pre-heat oven to 180c.
Step 2 - In a mixing bowl add all the dry ingredients.
Step 3 - Melt the coconut oil in a separate bowl in the microwave for 30 seconds.
Step 4 - Pour in the wet ingredients to the dry.
Step 5 - Then stir, until a dough like texture starts to form.
Step 6 - Using your hand kneed the mixture, until all the dry ingredients have been mixed in.
Step 7 - Divid the mixture into 12 pieces and roll out little balls. Place on a baking tray and use the bottom of something flat to press down on the balls.
Step 8 - Pop in the oven. Once cooked leave to cool.
