Pumpkin & Cinnamon Protein Bread

Don't throw away those insides from the pumpkin you're about to carve. Pop all the pumpkin in the oven and then blend it to make pumpkin puree. You can then make some amazing vegan recipes with it. Like the bread below.
This Vegan pumpkin & cinnamon bread is mouth watering good. A crusty outside with a gooey centre.
Preparation Time -  5 minutes
Cooking Time - 40 minutes
Makes - 1 Loaf (12 slices)
Level - Easy


1 Cup Self Raising Flour
2 tsp's Baking Powder
1/2 tsp Bicarbonate soda
2 tsp cinnamon
1/2 Cup Coconut Sugar
1/4 Cup Stevia or other sweetener
1/2 Cup Chocolate Chips
2 tsp Vanilla Essence
1/2 Cup Soya Milk
1/3 Cup coconut Oil
1 Cup Pumkin Puree

To make
Step 1 - Pre-heat oven to 180c.
Step 2 - In a mixing bowl add all the dry ingredients.
Step 3 - Melt the coconut oil in a separate bowl in the microwave for 30 seconds.
Step 4 - Pour in the wet ingredients to the dry.
Step 5 - Then whisk the ingredients for 3-4 minutes or until mixture is ready. I use a kitchen aid and the bread attachment.
Step 6 - Pour into a bread tin and bake at 180c for 40 minutes.
Step 7 - Leave to cool down and slice up and enjoy!
