No Bake Protein Bounty Bars

Vegan protein bounty bars, yes please. These are a take on the traditional bounty bars in the stores, just ours are healthy, no added sugar and of course vegan!

Ingredients

 

100g unsweetened shredded coconut 
50g Vitally Vegan protein powder (Coconut flavour)
15g tahini (1 and a half tbsp)
15ml coconut oil, melted (~3 tbsp)
30g date syrup (2 tbsp) 
75ml coconut milk from a can 
Melted dark chocolate (or homemade chocolate made with – 50g cocoa butter 25g cocoa powder 25g date syrup)
 
How to Make
  1. Add the unsweetened shredded coconut with the protein powder and mix in a bowl.
  2. Then add the tahini, coconut oil, coconut milk, and date syrup & mix well.
  3. Once everything is well combined, transfer to a small baking tray or a box and spread the mixture. Put in the freezer.
  4. Next, melt dark chocolate, or make a homemade version of cocoa butter, cocoa powder, and date syrup.
  5. Once melted, take out the chilled mixture, and cut it into 14-16 bars.
  6. Dip each bar in the chocolate, and put it to cool down on a metal net tray.
