Chocolate & Coconut Protein Granola
Vegan Home-made Chocolate & Coconut Protein Granola. This is super quick and easy and you can top with yoghurt or pour nut milk over the granola as a perfect tasting breakfast in the morning.

175g Gluten Free Jumbo Oats
75g Desiccated Coconut
75g Mixed Nuts
3 tbsp Cocoa Powder
4 tbsp Coconut Oil
4 tbsp Maple Syrup
2 tsp Vanilla Bean Extract
4 tbsp Flaked Coconut Slices

To make
Step 1 - Preheat oven to 150C. Line a baking tray with baking paper.
Step 2 - In a small pan over low heat (or in a microwave), melt the maple syrup and coconut oil together. Remove from the heat and stir in the cocoa powder and vanilla extract.
Step 3 - In a bowl, add the oats, Chocolate & coconut Protein Powder desiccated coconut and nuts and stir. Then pour in the syrup mixture and mix again.
Step 4 - Pour a thin layer onto the baking sheet and bake for 20 minutes, stirring occasionally.
Step 5 -  Once cooked, leave the granola to cool down. Then stir in the coconut flakes. You can store in one of our jars for up to two weeks.
