Vegan Protein Coconut Bars. The ultimate bar for those who love coconut and have a sweet tooth!

1 Cup Almonds
6 Scoops Vitally Vegan Coconut Protein Powder
1 Cup Porridge Oats
1 tsp Vanilla Extract
1 tsp Cinnamon
2 tbsp Almond Butter
100ml Coconut Nectar

Step 1 - Add the almonds to a food processor and blitz until crumbled.
Step 2 - Add in the porridge oats, protein powder and cinnamon and blitz for approximately 10 seconds.
Step 3 - Add the vanilla extract, coconut syrup and almond butter and blitz again.
Step 4 - The mixture will start to form into a ball and become like a dough.
Step 5 - Remove from the food processor and place in a tine or baking tray.
Step 6 - Press down firmly and flatten the mixture. Sprinkle with desiccated coconut on top.
Step 7 - Pop in the freezer for 1-2 hours or until mixture firm.
(Tip - Keep the coconut bars in the fridge, keeps them fresh and chewy!)
