Like Muffins, but super healthy, high in protein and bursting with the blueberry muffin smell. These blueberry bites are high in protein and full of fibre. Either enjoy as a little snack in the afternoon or make larger bars and have as an alternative to your breakfast.
Preparation Time - 10 minutes
Makes - 12 bites
Level - Easy
2 1/4 servings of Troo Calm Porridge (you can also use small porridge oats)
1 tbsp Troo fibre inulin syrup
60g Pip & nut blueberry almond butter
5ml Liquid stevia
25ml Almond milk
100g Frozen blueberries
28g Goji berries
Nutritional Information Per Bite
Step 1 - Add the blueberries to a saucepan on a low heat.
Step 2 - Once the berries start to bubble, remove from the heat and add the stevia and inulin fibre and stir.
Step 3 - Ina food processor add the oats, almond butter and goji berries and blitz for a few seconds.
Step 4 - Pour in the almond milk and the liquid berry mixture and blitz again for a few seconds.
Step 5 - Remove form the food processor and place in a try/tin and flatten out the mixture.
Step 6 - Pop in the fridge to chill for 1-2 hours.
Step 7 - Once hard, remove form the fridge and cut into bars or bites.
Best stored in the fridge!
