Vegan Isolation: Vital Meals to Get You Through Lockdown
The world is currently quite a scary place. We are having to cut down on time spent outside, seeing our loved ones and attending much anticipated events. 
However, we have to look on the bright side. 
I have personally spent a lot more time snuggling my cats, improving on my home workout routine and cooking delicious new dishes. 
In this blog post, I will be taking you through some of my favourite vegan staples that you definitely need in your home right now!

Buddha bowls
Buddha bowls are a must have in my everyday life, especially right now! 
Buddha bowls are simple, easy and can include a tonne of fresh fruit and vegetables that you need in your diet. 
It can be very difficult  right now not to sit down all day, watch tv and eat lots of sweet, sugary things. Don’t worry, we are all in the same place! 
However, we have to remember that getting our five-a-day is not only important for our immune system but also, for our health. 
Here are the ingredients for one of my favourite Buddha Bowls:
  • 1 Bell Pepper
  • Tofu
  • A Scoop of Hummus
  • A Handful of Spinach 
  • 1 Carrot
  • 1 Avocado 
  • White Rice
After I’ve cooked the rice and the tofu, I simply put it into one big bowl and there you have it, a perfect lunchtime meal. Personally, I think Buddha bowls are great! You can put any combination of fruit or veg in for a colourful, easy and nutritious snack.
Protein power
Whether you are working out during lockdown or not, protein is an essential part of your everyday diet. It helps your body stay fit and healthy, aids you in repair, boosts your metabolism, increases muscle mass and improves strength. 
So, keeping on top of your protein intake is a must!
I posted a lot of my delicious recipes on my Instagram, but here is my absolute favorite.
My Vegan Salted Caramel Protein Smoothie is definitely one of my most-loved drinks. 
It’s simple and easy, all you need is:
  • 250ml Natural Coconut Milk Kefir (Coyo Organic)
  • 2 Scoops Vitally Vegan Salted Caramel Protein Formula
  • 1/2 Banana
Then, simply blend it all together until it's completely smooth. It is chock-full of protein and it’s only 477 calories. It’s a great start to any morning.
Finding a good, stable protein powder for times like this is also vital. You need a protein powder that tastes amazing and that you can add seamlessly to every meal.
Vitally Vegan protein powder is great for sprinkling into your regular meals and adding a kick of flavour. Or to aid you in building muscle whilst you are doing your workouts at home. 
Vegan Sweet Treats
Nobody can resist a sweet treat from time to time and what’s better than a completely vegan one?
My biggest problem when it comes to baking is finding the time, but right now, it seems I have plenty of that on my hands!
Now, if you didn’t already know, my favourite thing in the world is coconut, which is why these Vegan Protein Bounty Bars definitely hit the spot. 
You will need:
  • 1 1/2 Cups Desiccated Coconut
  • 8 Scoops Vitally Vegan Coconut Protein Powder
  • 1 Pack Willy's Chocolate Buttons or other Vegan Chocolate
  • 3/4 Tin Of Sweetened Condensed Coconut Milk
  • 1 tbsp Coconut Oil
  • 2 tsp Pink Pitaya (optional)
 
Method:
Step 1 - Add the desiccated coconut, condensed coconut milk, pink pitaya to a food processor and mix.
Step 2 - In a cake tin, or baking tray, pour the coconut mixture in and flatten until smooth.
Step 3 - Pop into the freezer. Leave for 30mins.
Step 4 -  Melt the chocolate drops and the coconut oil, either in a microwave or in a glass bowl over a pan of boiling water.
Step 5 - Remove the coconut mixture from the freezer and out of the tin or tray to a chopping board.
Step 6 - Cut into slices and then brush on the melted chocolate, to most sides and place on a plate or tray.
Step 7 - Once you have brushed the melted chocolate onto your slices, then brush the final side with chocolate. 
Step 8 - Pop back in the freezer and leave until hard.
(Tip - Keep the coconut bars in the fridge, keeps them fresh and chewy!)
This is truly one of my absolute favorite sweet treats, nothing picks my mood up more than a delicious, vegan bounty bar filled with coconut and other goodness. 
During this pandemic, it can become really easy to have a low mood and feel unmotivated. Remember that whilst it seems the world has come to a halt, it doesn’t mean it won’t go back to normal. Take this time to focus inward on yourself and fill your diet with lots of yummy goodness that it will truly benefit from.
